Artichoke croquettes with coconut-lemongrass sauce, baby turnips, beluga lentils & winter green pilaf, and citrus chutney

FOURTH COURSE
Theo’s dark chocolate mousse on a graham crust enrobed in chocolate ganache, with passionfruit coulis, whipped coconut cream & cocoa nib-pepita brittle
